Perfectly balanced, the broad blade cuts effortlessly through vegetables, fish or meat. The blade is made of exceptionally high quality non stainless (carbon) steel. It has a very fine, traditional Solingen thin grind and is fine glazed by hand and can be sharpened with a ceramic sharpening rod, a sharpening steel or a sharpening stone. The
